Hand-forged from White Steel 1—the closest metal to the tamahagane steel traditionally used in crafting Japanese swords—the S1 Gyuto is then rendered matte black using a technique jealously guarded by only a handful of bladesmiths, creating a knife that is not only sharp but one with a striking aesthetic.

Hand-carved hardwoods are crowned by a blackened steel bolster, adding a discreet accent to the textural variations of our signature Obsidian Ebony or tactile American Walnut, both sustainably sourced and luxuriously polished, culminating in a grip that is precisely balanced and effortless to use.

Forge

The process begins with a forge reaching temperatures in excess of 1,000°C. The malleable steel is then repeatedly hammered to minimise impurities, ensure tensile strength and to realise the S1 Gyuto's signature silhouette. Our master bladesmiths then spend countless hours honing the cutting edge on a variety of different whetstones, each of which imparts distinct benefits and qualities to the blades final edge retention and sharpness.

As is the long-held superstition, giving a knife severs ties. To prevent the accidental end of your relationships, we have included a small envelope inside each handmade Hinoki box. Before gifting the knife, we encourage you to place a coin inside. Upon receiving the knife the recipient may then offer the envelope back to you as a token form of payment. This small act will ensure that all cutting remains solely in the kitchen.
